Thai Curry Noodle Soup

Ingredients
- 6 ounces rice vermicelli or bean thread noodles
- 4 cups vegetable broth
- 1 (13.5-ounce) can light coconut milk
- 1 tablespoon soy sauce
- Spicy Vegetable Stir Fry with Tofu
Instructions
- 1How to: Cook the rice noodles according to the package directions in a large pot using the vegetable broth instead of water. Do not drain. Stir in the coconut milk and soy sauce. Add the Spicy Vegetable Stir Fry with Tofu, stir until combined, and serve in four large soup bowls. Note: Use regular full-fat coconut milk for a richer soup.
