Sweet Potato and Cheese Quesadillas
Serves 4–6
Ingredients
- 2 teaspoons olive oil
- 8 (9- or 10-inch) flour or whole-wheat tortillas
- 2 cups shredded cheddar cheese
- Sweet Potato and Red Cabbage with Toasted Sesame Seeds
- Salsa
Instructions
- 1How to: Coat a large skillet with olive oil and turn the heat to medium-low. Place 1 tortilla on the skillet, add a little cheese and a spoonful of Sweet Potato and Red Cabbage with Toasted Sesame Seeds. Add another sprinkle of cheese and top with another tortilla. Toast each side until the cheese is melted, 2 to 3 minutes. Repeat for each quesadilla. Cut each into wedges, and serve with a side of salsa.
