Sweet Potato and Black Bean Tacos
Serves 4
Ingredients
- 8 (6-inch) corn tortillas, warmed
- 1 cup (15-ounce can) black beans, drained and rinsed
- Sweet Potato and Red Cabbage with Toasted Sesame Seeds
- 1 avocado, sliced
- ½ cup Cotija cheese, crumbled
- Salsa
- 1 lime, sliced into wedges
Instructions
- 1How-to: Add the black beans to the Sweet Potato and Red Cabbage with Toasted Sesame Seeds in a medium skillet, and heat through. Warm the tortillas in the oven before filling each with the mixture. Top with the avocado, cheese, salsa, and a squirt of lime juice or, if you’ve got company, serve your toppings in side bowls.
