Southwestern Broccoli, Black Bean and Corn Salad

Ingredients

  • 1 (15-ounce) can black beans, drained and rinsed
  • 1 cup cooked corn
  • ½ cup thinly sliced red onion
  • 1 avocado, chopped
  • Roasted Broccoli with Sunflower Seeds
  • Coriander and Lime Salad dressing (p. 147) or a vinaigrette
  • ¼ cup Cotija cheese or feta cheese
  • Salt and freshly ground black pepper
  • Tortilla chips

Instructions

  1. 1How to: In a large bowl, stir together the black beans, corn, and red onion. Fold in the avocado and Roasted Broccoli with Sunflower Seeds. Add dressing, top with cheese, season with salt and black pepper, and serve with a bowl of crunchy tortilla chips.
