Sesame Noodles with Edamame and Peanuts

Bright red radishes, green edamame, and creamy avocado team up nicely here to create a stunning-looking dish. It also takes almost no time to prepare. But the best part is the way chewy soba noodles taste coated in tangy sesame dressing. Since soba noodle varieties vary, scan the package cooking instructions and adjust boiling time as needed. Note: This recipe calls for toasted sesame oil, which has a nutty flavor. Raw or untoasted sesame oil is lighter, more neutral in flavor, and a better cooking oil.

Ingredients

  • 1 package (8- to 10-ounces) soba noodles
  • 1 cup frozen peeled edamame
  • 6 radishes, chopped
  • 1 tablespoon toasted sesame oil
  • 2 tablespoons rice wine vinegar
  • 3 tablespoons soy sauce
  • 1 cup chopped fresh mint
  • ½ cup toasted sesame seeds
  • Salt
  • Freshly ground black pepper

Serving suggestion

1 to 2 avocados, sliced

¾ cup salted peanuts

1 lime, cut into wedges

Instructions

  1. 1Bring a large pot of salted water to boil. Add the noodles and edamame and cook until both are done, about 3 to 4 minutes. Drain and rinse the noodles and edamame under cold water to prevent overcooking, and return them to the pot.
  2. 2Mix in the radishes, sesame oil, rice wine vinegar, soy sauce, mint, and sesame seeds until well combined. Taste, and season with salt and black pepper.
  3. 3Serve warm or cold, topped with avocado slices, peanuts, and lime wedges, for squeezing.

Easy Ingredient Swaps

Brown or white rice noodles, or spaghetti, for the soba noodles (follow the package cooking instructions)

Shredded carrots for the radishes

White wine vinegar for the rice wine vinegar

Chopped cilantro for the mint
