Ingredients
- 6 to 8 cups salad greens
- Mexican Corn, Red Pepper and Black Bean
- Coriander and Lime Dressing (p. 147)
- Salt
- Freshly ground black pepper
- 2 avocados, sliced
- 2 cups crumbled tortilla chips
Instructions
- 1How to: Ladle the Mexican Corn, Red Pepper and Black Bean over salad greens, and dress with Coriander and Lime Dressing,or a vinaigrette of your choice. Top with fresh ground pepper, a sprinkling of salt, sliced avocados, and tortilla chips.
