  • 6 to 8 cups salad greens
  • Mexican Corn, Red Pepper and Black Bean
  • Coriander and Lime Dressing (p. 147)
  • Salt
  • Freshly ground black pepper
  • 2 avocados, sliced
  • 2 cups crumbled tortilla chips

Instructions

  1. 1How to: Ladle the Mexican Corn, Red Pepper and Black Bean over salad greens, and dress with Coriander and Lime Dressing,or a vinaigrette of your choice. Top with fresh ground pepper, a sprinkling of salt, sliced avocados, and tortilla chips.
