Pita Stuffed with Eggplant and Olive Ragu
Serves 4
Ingredients
- 4 small pita pockets or 2 large pita pockets, halved
- Garlic-Roasted Eggplant and Olive Ragu
- 2 cups mixed greens
- Crumbled feta cheese
- Lemon Tahini Sauce (p. 146) or other creamy sauce
Instructions
- 1How to: Halve and toast the pita pockets. Stuff them with Garlic Roasted Eggplant and Olive Ragu, mixed greens, and as much feta cheese as you’d like. Finish it off with a sauce, if you’d like some creaminess. Lemon Tahini Sauce, Creamy Herb Sauce (p. 146), or store bought tzatziki do just fine here.
