Mushrooms, Asparagus and Tomato Crustless Quiche

Serves 4–6

Ingredients

  • 6 eggs
  • 1 cup whole milk or unsweetened plant-based milk (soy, almond, or cashew)
  • 1 teaspoon salt
  • Freshly ground black pepper
  • Roasted Mushrooms, Asparagus and Tomatoes with Garlic
  • 1 cup shredded cheese (your choice)

Instructions

  1. 1How to: Preheat the oven to 375 degrees. In a bowl, whisk together the eggs, milk, salt, and black pepper. Transfer 1 ½ cups of the Roasted Mushrooms, Asparagus and Tomatoes into a well-oiled 9-inch pie pan. (You can save any leftovers for a grain bowl.) Pour the egg mixture over the roasted vegetables and fold in the cheese. Bake for 35 minutes, or until the center is set and the edges crispy.
