Melted Cheese and Broccoli Wrap with Pesto

Serves 4

Ingredients

  • Roasted Red Pepper, Onion, and Broccoli with Pesto
  • 4 large (10-inch) flour tortillas
  • 6 to 8 slices mozzarella, cheddar, or Swiss cheese
  • Chunky salsa

Instructions

  1. 1How to: Lay out the tortillas on the countertop. Spread on a spoonful of Roasted Red Pepper, Onion, and Broccoli with Pesto. Top with a slice or two of cheese. Fold in the sides leaving about an inch between them, bring up the bottom and fold over, and roll into a wrap. Coat a skillet with olive oil, heat it over medium-low, and toast the wrap on each side for a few minutes until crisp. Repeat for each remaining wrap. Top with salsa.
