Lemon-Roasted Mushrooms, Asparagus and Tomato Pasta

Ingredients
- 8 to 10 ounces short pasta, such as penne
- Roasted Mushrooms, Asparagus and Tomatoes with Garlic
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
- ½ cup grated Parmesan cheese or nutritional yeast
- Salt
- Freshly ground black pepper
- ¼ to ½ teaspoon red pepper flakes
Instructions
- 1How to: Cook the pasta in salted water according to the package directions. Drain, and return the pasta to the pot. Add the Roasted Mushrooms, Asparagus and Tomatoes with Garlic, olive oil, lemon juice, and Parmesan cheese, and stir until combined. Taste, season with salt and black pepper, and sprinkle on red pepper flakes.
