Corn and Green Beans Potato Salad with Toasted Almonds

Serves 4

Ingredients

  • 1 pound new potatoes
  • 3 to 4 green onions, thinly sliced
  • Corn and Green Beans with Toasted Almonds
  • Simple Salad Dressing (p. 147 ) or Coriander and Lime Dressing (p. 147) or green goddess dressing
  • Salt
  • Freshly ground black pepper
  • Salad greens (optional)

Instructions

  1. 1How to: Put the potatoes in a soup pot and add enough cold water to cover them by an inch. Bring to a boil, then lower the heat and simmer until the potatoes pierce easily with a fork, about 6 to 8 minutes. Drain the potatoes, chop into quarters, and toss them into a large bowl. Fold in the green onions and Corn and Green Beans with Toasted Almonds, and lightly dress. Taste, and season with salt and black pepper. Serve as is, or on top of salad greens.
